Hi Rune, tell me about the Jersey cows!
For some time now we have been working with Wirums Säteri in southern Sweden. We buy various details such as topside, loin, sirloin and inner thighs from them. Everything comes from a cow breed called Jersey, which grows slower than other beef breeds. This results in increased marbling and the meat is often rated incredibly highly for its tenderness, juiciness and flavour. Almost all our beef on the menu comes from Wirum.
You also work with Frägsta Mejeri in Hudiksvall.
Yes exactly. It's a dairy that makes fresh cheeses the authentic Italian way, but with Swedish milk from farms near Frägsta. It's great that our cheeses at Zink come from there!
Tell me about the vegetables at Zink.
Since this summer we buy a lot of our vegetables from Lilla Labäck outside Lidköping. They produce KRAV-certified vegetables and I feel good that our guests can be sure that they are getting locally grown and unsprayed produce.
