CHITCHAT with Farah Hennis

In our chitchat format, we meet a person we like and talk about food, drink, parties, atmosphere and the great life in a restaurant. This week we meet Farah Hennis in the kitchen at Prinsen, where he works as a sous chef.

Hi Farah! You came to Sweden 10 years ago, started at Prinsen as a dishwasher five years ago and are now sous chef. We are impressed! Tell us about your daily life.
I start my day by going to school. Swedish society impresses me and I want to learn something new every day! Then I go to my job at Prinsen. It is nice to work with so many people from different parts of the world, all with different backgrounds. I make sauces, make mise en place and cook for our guests. If there are evening shifts, I am also ultimately responsible for the kitchen and the food served!

What is the best thing about working at Prinsen?
All the colleagues who treat me with great joy and respect. It is also fun to work in a restaurant that prepares food of such high quality. And of course all the guests - that they are happy and satisfied!

What are your three best qualities that come in handy in the Prince's kitchen?
I have five years of experience from Prinsen so I know the kitchen very well and know all the details of the food served. In addition, I have a lot of patience and am happy to train new people in our kitchen. I am also stress-resistant and solve all situations even if there is a lot to do.

Last week you updated the menu. Tell us more!
We update the menu quite often here at Prinsen - we cook in season when it comes to fruit, vegetables, fish and meat. Now we have a new pepper steak that contains meat from the best part of the beef fillet. This is served with potato gratin and butter-fried oyster slices, baked tomatoes and pepper sauce. We also have a fish stew with char, cod, scallops, mussels, root vegetables and saffron aioli. That soup has an amazing flavor!

Finally, you are from Egypt, but you work in a classic Swedish restaurant. What is your favourite Swedish dish?
Sweden and Egypt are two completely different countries, as is the food... My favourite dish is actually Wallenbergare! I like it because it has a very special taste due to the spice mixture called "four spices". Wallenbergare reminds me that I am and live in Sweden!
