Chitchat with Aziz Karademir

In our chitchat format, we meet someone we like and talk about food, drink, partying, atmosphere and the great life in the pub. This week we meet Aziz Karademir who is the Operations Manager at Ricordi.

Hi Aziz! You've been on Ricordi for a few months now. And thus one of our favourite pubs is joined by one of our favourite people! So nice to have you here! Tell us about yourself!
Thanks! I was basically born on a restaurant floor. I grew up in a restaurant family and then ran my own from 2009 to 2015. Since then I've been around a lot, having worked for both Brasseriegruppen and the Stureplans group. Most recently, I come from a restaurant in the South of Stockholm.

How would you tell someone who has never been here about Ricordi and the experience there?
Ricordi is a sexy Italian with a twist. We do the original, with our own little touch. Here, guests should feel warmth, a family atmosphere and a comfortable ambience. It should be cheerful and high ceilings. You should be able to come here whatever the situation: whether it's to have a pizza by yourself at the bar or to celebrate your birthday with everyone you know. There are no rules - we solve everything!!

You're one of the happiest, loveliest and most charming people we know. You take guests by storm, everyone loves you. What's your secret?
I LOVE what I do. I look forward to every single shift! Can't wait to meet all the guests, old, young, regulars, new. I'm a giver..... haha!

What do you like most about life in the pub?
The pace! And that there are always little problems to solve. It could be overbooking, someone getting the wrong wine... Small things to be solved with seconds of precision.

So it's the thrill of passing that's the great thing?
Exactly! Some days when I've done 15 hours, I just want to do one more session.....

What is good hosting for you?
Working in a restaurant is like inviting friends to your home. The experience starts when you greet them at the door and continues until you wave goodbye. I like hospitality that is fun, charming and with a twinkle in the eye.

Who is your dream guest, dead or alive?
Al Pacino.

Name some of the best restaurant experiences you've had in your life?
There are many, but two stand out. Aquavit in NY was an incredible total experience, from the greeting at the door, to the food.... Then there's Baronessa in Sicily. There I had the best pasta I've ever had in my life, the mushrooms were picked up in the mountains near Etna.

Favourite food?
A spicy sausage with shrimp salad is always good.

If you were a boozer, which one would you be?
Tequila. Because you hate to love it.

Ricordi has Stockholm's sunniest outdoor terrace. What's happening there this spring?
As soon as it gets warmer, we'll remove some of the glass. It will then be full from morning to night! Expect pitchers of spritzers and lots of tasty nibbles!

If we come to your home in Mariefred for dinner. What are you offering?
I have a hard time getting into the kitchen... I think my wife will be cooking dinner and I think it will be a homemade pasta and a wild boar ragù.

Ricordi has been one of Stockholm's most successful restaurant openings. What are the developments going forward?
Well, the restaurant is almost always fully booked, but we will work even harder to enhance the bar experience late at night. Everyone should want to come here and hang out with me and my restaurant family! Come and have a few drinks after dinner, but before the club or going home! There should be a good buzz and great music until closing time.

We happen to know that you have a fucking singing voice. How can we benefit from it?
It's for the after party!! Haha!
